Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 15 soft caramels (like Kraft), unwrapped
  • 2 tablespoons heavy cream
  • ½ cup milk chocolate chips (or semisweet, if you prefer)

Instructions

Step 1: Make the cookie dough
In a large bowl, cream together the softened butter and sugar until light and fluffy. Mix in the vanilla extract. Gradually add the flour and salt, stirring until a soft dough forms.

Step 2: Shape the cookies
Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet. Use your thumb or the back of a small spoon to make an indentation in the center of each cookie. Chill the dough for 15–20 minutes in the refrigerator to help them hold their shape.

Step 3: Bake
Preheat your oven to 350°F. Bake the cookies for 12–14 minutes or until the edges are just starting to turn golden. Remove from the oven and use the back of a spoon to gently press the center again while warm. Let them cool completely.

Step 4: Make the caramel filling
In a microwave-safe bowl, melt the caramels and heavy cream in 30-second intervals, stirring until smooth and creamy. Spoon a small amount of caramel into the center of each cooled cookie. Let the caramel set for about 10 minutes.

Step 5: Add the chocolate drizzle
Melt the chocolate chips in the microwave in 20-second intervals, stirring until smooth. Drizzle the chocolate over the cookies using a fork or small piping bag. Let the chocolate harden before storing.
