How to make lemon cookies
These Lemon Cookies are so good, the perfect treat for lemon lovers, and they’re such a pretty color, they are perfect for early Spring or Summer parties. They are bursting with Lemon flavor, and are sure to please every cookie lover who bites into one of these beauties. Make sure to save this one, because it will definitely become one of your favorite lemon desserts! These chewy lemon cookies can also be served with a drizzle of icing or serve plain, but the addition of a creamy frosting is the perfect way to top these lemony cookies.
HERE’S WHAT YOU NEED:
2 3/4 cups of Flour
1/2 teaspoon of Baking Powder
1 teaspoon of Baking Soda
1/2 teaspoon of Salt
1 1/2 cups of white Sugar
1 cup of unsalted Butter
1 Egg
1 tsp real lemon extract
2 teaspoons of Vanilla extract
1 tablespoon of fresh lemon juice
fresh lemon zest
3 – 4 drops of Yellow Food Coloring Gel
FROSTING:
4 Tablespoons of room temperature butter
4 ounces of Cream Cheese – Softened
1 teaspoon of Vanilla
2 Tablespoons of Heavy Cream
4 cups of Powdered Sugar
HERE’S WHAT YOU DO:
In a medium bowl of a stand mixer, add the Butter, Sugar, Egg and Vanilla, and mix together for a couple of minutes, until smooth and creamy.Â
 Juice the Lemon, and add the Juice to the Mixing bowl. Zest the Lemon, and add zest to the mixing bowl, and mix until blended.
In a separate bowl mix together all of your dry ingredients, add the Flour, Baking Powder, Baking Soda, and Salt, and sift together until completely mixed. Add to the mixing bowl, and mix until blended and a smooth dough has formed, making sure you scrape down the sides of the bowl. Add the Yellow Food Coloring Gel, and mix until well blended. Line 2 cookie sheets with Parchment Paper and set aside.
Heat the oven to 350 degrees, and using one of your already prepared baking sheets, scoop the Cookie Dough with a medium cookie scoop, and place dough balls on the Parchment Paper lined Cookie Sheets (about 12 to a cookie sheet), and bake cookies for 15 minutes, or until the edges are just beginning to reach a golden brown. Repeat until all the dough has been scooped and baked. Remove Cookies to a wire rack to completely cool. Serve and enjoy!
Makes approximately 36 Cookies
While the Cookies are cooling, make the Frosting: In the mixing bowl, place the Butter, Cream Cheese, Heavy Cream, and Vanilla, using an electric mixer, mix until smooth and creamy. Add the Powdered Sugar a cup at a time, and mix on low speed, scraping down the mixing bowl when needed, until all the Powdered Sugar has been added. Blend until smooth and thick. Place the Frosting in a Pastry bag with a small round tip, and when the Cookies are cool, pipe the Frosting onto the top of the Cookies in a Zigzag, or curvy pattern – See photo. Allow Frosting to set up or firm up, about 30 minutes. Serve, and Enjoy!

You can store them in an airtight container for up to one week.
Can I add any ingredients to these cookies?
Yes! You can add 1/4 cup white chocolate chips to these cookies for added sweetness. They will still have a bright lemon flavor, yet sweet and creamy, still the perfect cookie if you are a lemon fan.
