  • 4 large russet potatoes

Instructions

Step 1: Bake the potatoes
Preheat your oven to 400°F. Scrub the potatoes clean, pat dry, and pierce each one several times with a fork. Rub them lightly with olive oil and sprinkle with salt. Bake directly on the oven rack (or on a foil-lined baking sheet) for 45–60 minutes, until soft when pierced with a fork.

While the potatoes bake, brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease. Add the diced onion and sauté until softened.
