Banana bread is a sweet bread that contains no yeast, but when quickly mixed with the addition of baking powder, rises while it bakes like a traditional yeast bread would. Known as a loaf bread or a quick bread, these breads are perfect for the busy person, because you don’t need to let your dough rise.

What kind of loaf pan is best for banana bread?
I love using my glass loaf pan that I have had for about 20 years, but you can use any type of loaf pan you like. I find a metal pan will bake faster and hotter, possibly resulting in your bread being dry around the sides and corners.
Do I really need to use milk in banana bread? What alternatives are there?
You don’t have to use milk in this recipe, you can use Lactaid brand milk or soy milk as an alternative for this recipe if you are dairy sensitive. And if you’re out of Milk, you can use Vanilla Coffee Creamer.

What kind of Banana’s should I use?
You can use any kind of Banana or brand you choose. I used Organic Banana’s, and let them get really ripe, which means the yellow peeling had lots of black spots on it, and it felt a little mushy when I picked it up. That’s the perfect Banana for Banana Bread, because as Banana’s ripen, they become sweeter, and softer, so it’s got that delicious sweet gooey Banana flavor, and all you need to do is peel it, and mash it, add your ingredients for the bread, and you’re good to go. Also, did you know you can freeze Banana’s? Sometimes I’ll have them left over, and I don’t want to throw them away, but I’m not ready to make Banana Bread at that moment, so here’s what you do: Peel the ripe Bananas, and place them in a Freezer bag, and pop them in the freezer. They’ll last for about 5 weeks in the freezer, and then you’ll have your ripe Banana’s to make your bread when you’re ready.
If you’ve never made Banana Bread before, or maybe you’re an old Pro, but don’t make it very often, you’re going to love this recipe. It always turns out the best loaf of Banana Bread, and it’s moist, and tender, and just delicious. You can have it done in no time, and your family will be thrilled when they get a whiff of fresh baked bread wafting through the house. I love to double the recipe, and bake 2 loaves at a time, because you can slice this for Breakfast, lunch and Dinner. It’s a great snack, or dessert topped with whipped cream, or ice cream!

Step by Step Instructions
Step 1: Begin by adding softened butter, sugar, vanilla, and eggs to a bowl and blend well.
Step 2: Next, add two bananas and mash them in the bowl with the butter, sugar, eggs, and vanilla. Stir until mashed bananas are mixed well with the butter mixture, then add the milk.
Step 3: Then add flour, baking soda, baking powder, and salt to the bowl with the bananas and butter sugar mixture.
Step 4: Make sure to stir all ingredients together until a nice batter has formed and keep stirring while adding the milk, making sure everything is very well mixed together.
Step 5: Pour your batter into a greased and floured loaf pan.
Step 6: Once you have filled the loaf pan with your batter, let’s add the banana on top. Take one banana and split in half, lay on top of the batter and sprinkle with brown sugar and one TBSP of vanilla. Then, bake at 350 degrees for 45 minutes. If you need an extra 15-minute bake time, you can cover with foil and bake and extra 15 or 20 minutes, depending on your oven.

This recipe makes the ultimate loaf of banana bread.
Ingredients
- 1 1/2 cups flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 6 tablespoons butter
- 2/3 cup sugar
- 2 eggs
- 1 cup mashed bananas (2 bananas)
- 1 banana for the top
- 2 tablespoons brown sugar
- 2 tablespoons vanilla - 1 TBSP in the batter and the other TBSP to sprinkle of top of the loaf.
- 1/8 cup milk
- 1/4 cup brown sugar - to sprinkle on top of the banana
Instructions
- Preheat your oven to 350 degrees and grease and flour your loaf pan.
- Add butter, eggs, 1 TBSP vanilla, sugar to a bowl and stir until blended and light and fluffy.
- Next, add two bananas in with the butter sugar mixture and mash the bananas and fold in until fully combined.
- Then, add flour, salt, baking powder, baking soda and blend well until a thick batter forms.
- Make sure to stir all ingredients together until a nice batter has formed and keep stirring while adding the milk, making sure everything is very well mixed together.
- Scrape the batter into your prepared loaf pan and spread evenly.
- Cut one banana in half and place on top of the batter, sprinkle brown sugar and 1 TBSP vanilla on top of the banana and place loaf pan in the oven.
- Bake for 45 minutes or until bread is golden brown. This is the baking time that worked in my oven. You may need to bake an extra 15-20 minutes, depending on your oven. If the top gets too brown, you can cover with a piece of foil.
- Let cool for 5 minutes in the pan and turn out on a cooling rack or slice directly in the loaf pan.
