This is one of the best sweet carrots recipes I have ever made and you can be sure this perfect side dish shows up at every holiday meal, it really is my favorite way to serve carrots. These whole carrots are smothered in maple syrup and butter glaze, then wrapped in bacon and cooked to perfection in a sweet, beautiful glaze. The extra flavor that the bacon lends is what makes this easy recipe a great addition to any meal. Weather you need an easy side dish for busy weeknights or a new addition to easter dinner, this recipe is a delicious way to serve these tender carrots.
Simple ingredients you need for this sweet carrot recipe:
Fresh carrots
maple syrup
unsalted butter
dark brown sugar
bacon
fresh parsley
garlic salt
black pepper
First step is to begin by heating a 12-inch skillet over medium-high heat on your stove top and adding butter, maple syrup, and brown sugar. Heat until butter is melted and remove skillet from heat and set aside. Peel larger carrots and cut of the green tops, rinse under water, and pat dry with paper towels. Next, open bacon package and wrap one strip of bacon around each carrot and lay in skillet on top of the sweet butter glaze you just heated in the skillet. Repeat until you have used all carrots, then sprinkle garlic salt, pepper, and parsley over the tops of the bacon wrapped carrots. Cook on low for 30 minutes, occasionally, spooning a little bit of the irresistible glaze over the top of the carrots and bacon while they cook. You can test them with a fork and see if they have a tender texture or not, when they are tender they are done cooking.
If you have leftover carrots you can always store this carrot side dish in an air-tight container in the fridge and heat up the next day as a delicious side dish.
