For the candy corn cookies:

  • 2 TBSP Brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tsp baking soda
  • 1/2 teaspoon salt
  • 3/4 cup Gumdrops cut into pieces
  • 1/2 cup white chocolate chips

Prepare the Sugar Cookie Dough:

a. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.

b. Beat in the egg and vanilla extract until well combined.

c. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

d. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

e. Add chopped gumdrops.

f. Scoop on a cookie sheet lined with parchment paper. Be sure to bake these on parchment paper as the gumdrops get very sticky when hot.

g. Bake at 350 degrees for 10-12 minutes.
