Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 sticks (3/4 cup) butter, softened
- 3/4 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 (3.4 ounce) box instant vanilla pudding mix (unprepared)
- 2 tablespoons Orange jello
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups white chocolate chips
- Orange gel food coloring
Instructions:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the all-purpose flour and baking soda. Set aside.
- In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the vanilla extract, mixing well after each addition.
- Gradually add the dry ingredients (flour and baking soda mixture) into the wet ingredients, mixing until just combined.
- Stir in the instant vanilla pudding mix until fully incorporated into the dough.
- Sprinkle the orange jello over the cookie dough as well as adding orange gel food coloring and stir until incorporated.
- Gently fold in the white chocolate chips until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set and lightly golden brown.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
