Cheesy fiesta corn
This Cheesy Fiesta Corn is so good, and it’s unbelievably easy.  You make it right in the same dish you’re going to bake it and serve it in, so there’s no fuss with this one.  The flavors are really wonderful, and it will definitely be a favorite, because its gooey and creamy, and just delicious!   Be sure to keep this one handy. 

HERE’S WHAT YOU NEED:

  • 3 cans of Gold and White Corn (15 – 16 ounces)
  • 2 cans of Fiesta Corn (or Mexi-corn – with Green and Red Peppers)
  • 1 can of Creamed Corn (15-16 ounces)
  • 1 package of Colby Jack Shredded Cheese – 16 ounces
  • 1 package of Shredded Cheddar Cheese – 8 ounces
    1 container of Shredded Parmesan Cheese – 16 ounces
  • 4 ounces of Velveeta Queso Blanco – cut in cubes
    1 Stick of Butter – Melted
    2 Tablespoons of Flour
  • 1 cup of Heavy Cream
  • 3/4 cup of frozen diced Onion – Red Pepper – Green Pepper
  • 1 small can of chopped Green Chiles (4 ounces)
    1 cup of Taco Sauce – I used Ortega – Mild Sauce
  • 1/2 cup of Brown Sugar
  • 1 teaspoon of Garlic Salt
  • 1/2 teaspoon of Garlic Powder
  • 1/4 teaspoon of Seasoned Pepper

HERE’S WHAT YOU DO:

In a Microwave safe dish, add the stick of Butter, and Microwave until melted.  Pour the melted Butter into a 9 X 13 dish.  Open the cans of Corn, and drain Corn in a Colander (except the Creamed Corn – do not drain the Creamed Corn), and add all the Corn to the Dish.  Stir well to mix with Butter.   Open the Creamed Corn, and pour the Creamed Corn over the Whole Corn in the dish.  Sprinkle the Garlic Salt, Garlic Powder, and Seasoned Pepper over the corn, and stir.

Add the Heavy Cream, and stir.  Add the diced Onion, Red Pepper, and Green Pepper, and stir. Add the can of Chopped Green Chiles, and mix.  In a small bowl, add the Taco Sauce, and Brown Sugar, and stir until mixed.  Pour over the Corn, and stir well.   In a separate dish, add the Shredded Colby Jack, Cheddar, and Parmesan Cheese, and Sprinkle the Flour over the Cheese, and stir.   Add the Cheese to the dish and stir well to mix.  Cut the Queso Blanco into small cubes and lay on top of the Corn.  Cover the dish with Foil, and place the Corn in the oven at 400 degrees for 30 minutes.

After 30 minutes, reduce the heat to 350, and remove the Foil from the dish.  Leave the Corn in the oven, uncovered for another 15 – 20 minutes, until it’s bubbly, and golden brown.  Remove from the Oven, and let stand 5 minutes before serving.  Serve, and Enjoy!

Makes 12 – 15 servings
NOTE:  If you can’t get the cans of Fiesta Corn, or Mexi-corn, you can use a large can of Yellow Sweet Corn, and just add a few more diced Onions, and Red and Green Peppers.  ALSO:  I used ‘FLAVOR-PAC’ brand, Southwest Blend, of diced Onion, and Red and Green Peppers, but you can use any brand you choose.
