Ingredients

  • 1 sweet onion-chopped 
  • 2 Tablespoons of butter
  • 1 pound of ground sirloin – already cooked – frozen
  • Garlic salt – to taste
  • Garlic powder – to taste
  • Seasoned salt – to taste 
  • Chili powder – 1 1/2 teaspoons 
  • Cumin – 1 Tablespoon
  • 1 large can of Tomato Sauce – 29 ounce can
  • 3/4 cup of Ketchup 
  • 1 cup of water
  • 1 can of pinto beans – drained and rinsed
  • 3 Tablespoons of brown sugar 
  • In a medium cooking pot, add the butter, and chopped onion, and sauté until golden brown, and cooked tender.  Add the frozen ground sirloin, and stir well to mix, breaking up or crumbling the sirloin into a fine crumble.  
  • Let cook with onion for 5 minutes.  Sprinkle with the garlic salt, garlic powder, seasoned salt, chili powder, and cumin, and stir well to blend.  Add the can of tomato sauce and mix well.  Add the ketchup and water and stir.
  • Open the beans, and drain and rinse well.  Add the beans to the pot, and gently stir.  Add the brown sugar and stir to blend.  Let the chili cook for 30 minutes, then do a taste test and if it needs more salt or chili powder, add a little more until it is to your liking.  
  • If you like your chili hot, add some extra chili powder, a little at a time to season.  If you need it a little sweeter, add a little more brown sugar.  If you want it a thick consistency, leave it thicker, if you prefer it a little thinner, add a little more water.  When you get it just like you like it, serve and enjoy!

NOTE:  Regarding the cooked and frozen meat.  I buy about 5 pounds of ground sirloin ( you can use hamburger meat, or ground chuck, whatever you prefer). I add all

Five pounds to a large heavy roaster, and I cook all five pounds, until completely done, and well browned.  I break up the meat into small crumbled pieces.  I don’t season the meat, because I can make different dishes with it and season it during cooking.  I drain off all the fat/grease and use paper towels to completely remove all fat from the pan.  I let the meat cool completely, then spoon it into small quart size freezer bags, and pop it in the freezer.  I try to put about a pound of cooked meat in each bag.  Then, on nights when I need a meal in a hurry, I simply take it out of the freezer and make meals, like the chili, or spaghetti sauce with pasta, Spanish rice, Enchiladas, Tacos, or many other dishes that use cooked ground beef.  This will save you a bit of time and makes meal preparation so must faster and easier.
