  • 12 large marshmallows

How to Make Hot Cocoa Cupcakes

Step 1: Preheat the Oven

Preheat your oven to 350°F.

Line a standard 12-cup muffin pan with cupcake liners.

Brown, white, red, or Christmas cupcake liners would all look beautiful with these.

Step 2: Combine the Dry Ingredients

In a large mixing bowl, whisk together:

  • Flour

How to Make Marshmallow Frosting

Add the softened butter to a large mixing bowl.

Beat with an electric mixer for approximately 2–3 minutes, or until light and fluffy.

Add the marshmallow creme and vanilla.

Beat until smooth.

Gradually add the powdered sugar, about 1/2 cup at a time, mixing well after each addition.

Continue beating for another 1–2 minutes until the frosting is light and fluffy.

If the frosting is too thick for piping, add heavy cream or milk 1 teaspoon at a time until you reach the desired consistency.

How to Decorate Hot Cocoa Cupcakes

Make sure your cupcakes are completely cool before decorating.

Transfer the marshmallow frosting to a piping bag fitted with a large round or star piping tip.

Pipe a generous swirl of white marshmallow frosting onto each cupcake.

Jennie’s Thoughts

There is something about hot cocoa desserts that immediately makes me think of Christmas and cold winter nights.

I wanted these cupcakes to actually look like a cup of hot chocolate, not just taste like chocolate cupcakes.

So I added hot cocoa mix right into the cupcake batter.

Then I topped them with fluffy white marshmallow frosting because, obviously, you can’t have hot chocolate without marshmallows.

The decorations are my favorite part.

I put one marshmallow right on top, sprinkled mini chocolate chips around it, and then gave the whole cupcake a little dusting of cocoa powder.

They’re so simple, but once they’re all sitting together on a tray they look adorable.

I think these would be especially cute for a Christmas movie night with mugs of actual hot cocoa sitting next to them.

Marshmallow Fluff or another brand of marshmallow creme works perfectly for the frosting.

Because marshmallow creme is very sticky on its own, combining it with butter and powdered sugar creates a much more stable frosting that’s easier to pipe onto cupcakes.

How to Get Tall Bakery-Style Frosting

Use a large piping tip and don’t be afraid to pipe a generous amount of frosting.

Start around the outside edge of the cupcake and work your way toward the center, building upward as you pipe.

Finish with a little peak at the top.

Then gently press the marshmallow into the frosting.

You want it nestled into the frosting rather than balancing precariously on top.

Toast the Marshmallow

Want to make these look even more like real hot cocoa?

Lightly toast the marshmallow before placing it on the cupcake.

Use a kitchen torch to carefully toast the outside until lightly golden.

Let it cool briefly before adding it to the frosting.
