  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 (15 oz) cans chili beans (do not drain)
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 3 cups beef broth
  • 12 ounces uncooked spaghetti, broken in half
  • Shredded cheddar cheese, for serving

Instructions

1. Brown the Beef

In a skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease.

Add the diced onion and garlic and cook for 2–3 minutes until softened.

2. Add to Crock Pot

Transfer the beef mixture to the crock pot.

Add:

  • Chili beans (with liquid)
  • Kidney beans
  • Diced tomatoes
  • Tomato sauce
  • Tomato paste
  • Beef broth
  • All seasonings

Stir well to combine.

3. Slow Cook

Cover and cook on:

  • Low for 6–7 hours, or
  • High for 3–4 hours

4. Add the Spaghetti

About 30–40 minutes before serving, stir in the uncooked spaghetti, making sure it’s submerged in the liquid.

Cover and continue cooking until the pasta is tender, stirring once halfway through to prevent sticking.

5. Serve

Taste and adjust seasoning if needed.

Serve hot topped with shredded cheddar cheese.

Tips for the Best Chili Spaghetti

  • Break the spaghetti in half so it fits and cooks evenly
  • Stir once during the final cooking time to prevent clumping
  • If it thickens too much, add a splash of broth
  • Use freshly shredded cheese for the best melt
