Add the dry ingredients to the wet ingredients and stir until blended. Add Jordan’s skinny syrup to the dough and stir.
Next, add Andes mint baking chips and stir until fully combined.
Then, take a medium size cookie scoop and scoop the cookie dough into a deep-dish cookie pan. Add two Andes mints to the center of the dough and then cover the mints with another scoop of cookie dough.
Bake at 350 degrees for 15-18 minutes. Remove from the oven and let cool on a cookie rack or serve warm with a glass of milk.
