Christmas Jam Recipe
Ingredients:
- 2 cups fresh cranberries
- 2 cups fresh or frozen strawberries
- 4 cups sugar
- 1 (3 oz) box of fruit pectin (like Sure-Jell)
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ cup water
Instructions:
- In a large saucepan, combine cranberries, strawberries, and water. Bring to a boil, then reduce the heat and simmer for about 10 minutes, until the cranberries burst and the mixture softens.
- Using an immersion blender (or potato masher), blend until smooth.
- Stir in the pectin and bring to a full rolling boil that can’t be stirred down. Boil for 1 minute.
- Add the sugar, cinnamon, and nutmeg. Stir constantly and bring back to a full boil for another minute.
- Remove from heat, skim off any foam, and ladle into sterilized jars.
- Seal and process in a water bath for 10 minutes, or store in the refrigerator for up to 3 weeks.
