Christmas Jam Recipe

Ingredients:

  • 2 cups fresh cranberries
  • 2 cups fresh or frozen strawberries
  • 4 cups sugar
  • 1 (3 oz) box of fruit pectin (like Sure-Jell)
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup water

Instructions:

  1. In a large saucepan, combine cranberries, strawberries, and water. Bring to a boil, then reduce the heat and simmer for about 10 minutes, until the cranberries burst and the mixture softens.
  2. Using an immersion blender (or potato masher), blend until smooth.
  3. Stir in the pectin and bring to a full rolling boil that can’t be stirred down. Boil for 1 minute.
  4. Add the sugar, cinnamon, and nutmeg. Stir constantly and bring back to a full boil for another minute.
  5. Remove from heat, skim off any foam, and ladle into sterilized jars.
  6. Seal and process in a water bath for 10 minutes, or store in the refrigerator for up to 3 weeks.
