Hasselback zucchini
This Hasselback zucchini dish is so easy to make, and it’s delicious as well, everyone is sure to love it.

You can have this hearty vegetable dish finished in under an hour.  This is a perfect side dish to pair with fried chicken, grilled steak or pulled pork, this dish goes well with almost anything on the table.  It’s so versatile, you could serve this for Brunch or Dinner.  Be sure to keep this one in your favorites.

  • 5 medium Zucchini – sliced
  • 2  Tablespoons of Olive Oil
  • 1/4 teaspoon of Garlic Powder
  • 2 cloves of Garlic – minced
  • 3 ounces shaved Parmesan
  • 4 Tablespoons shredded Parmesan – more for sprinkling on top

Wash the Zucchini, and dry with paper towels.  Slice the Zucchini in 1/4 inch pieces.  Line a 9 X 13 dish with Parchment paper, and place the Zucchini on the Parchment paper in rows.  In a small bowl, mix the Olive Oil, Garlic powder, Minced Garlic, and shaved Parmesan, until well blended together.

Spoon the Olive Oil/Parmesan cheese mixture over the Zucchini, and place the dish in the oven at 400 degrees.  Roast the Zucchini for about 30 minutes, or until it’s a light golden brown.  Remove the dish from the oven, and sprinkle the shredded Parmesan cheese on top of the Zucchini.  Return the dish to the oven for 5 more minutes, or until the Cheese is bubbly and browned.  Remove the dish, and serve with Parmesan on the side.  Enjoy!
