Ingredients:
- 1Tbs butter
- 1 large chicken breast
- 1 sweet onion -chopped
- 1 can white beans – drained and rinsed
- 4 cups of chicken broth
- 2 cups of bottled water
- 1 Tbsp minced garlic
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 can of Rotel
- 2 Tbsp of Brown Sugar
- 2 Tbsp of grated Parmesan cheese mixed with 2 Tablespoons of flour
- 1/4 cup fresh cilantro, chopped (for garnish)
- Shredded cheese, jalapeños, and tortilla chips (for serving)
Instructions:
- In a medium sized heavy stock pot, add the butter, and chicken breast. Sprinkle with garlic salt, garlic powder, and seasoned salt, and cook until done or almost done, then slice into small pieces with a sharp knife, and cook until completely done, and golden brown.
- Push to one side of the pot, and add the chopped onion, and sauté until golden brown and tender. Add the white beans, and the chicken broth, and stir well.
- Add 2 more cups of water. Add the minced garlic, chili powder, cumin, Rotel and brown sugar, and stir to blend. Sprinkle the chili with more garlic salt.
- Bring to a boil, reduce heat to medium low, and cook at a simmer for 30 minutes. Turn heat to low, and using a potato masher, mash the beans until completely smashed into the chili.
- Stir well, and add the cheese/flour mixture, stir again and simmer for another 30 minutes, stirring occasionally.
- Serve the White chicken chili with Tortilla chips and enjoy!
