There’s something so comforting about a big baked potato loaded with delicious toppings, and this Marry Me Chicken version takes an ordinary baked potato to a whole new level.

I started with a large baked potato and fluffed the inside with butter, salt, and pepper.

Then I made a delicious skillet of Marry Me Chicken with a rich, creamy sauce filled with garlic, Parmesan cheese, sun-dried tomatoes, and Italian seasonings.

Once the chicken was cooked, I sliced it into tender pieces and arranged them over the fluffy potato.

Ingredients

For the Baked Potatoes

  • Salt and black pepper, to taste

For the Marry Me Chicken

  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Creamy Marry Me Chicken Sauce

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy whipping cream
  • 1/2 cup chopped sun-dried tomatoes, drained
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes, optional
  • Salt and pepper, to taste

For Topping

  • Additional freshly grated Parmesan cheese

How to Make Marry Me Chicken Loaded Baked Potatoes

Step 1: Bake the Potatoes

Preheat your oven to 425°F.

Wash and scrub the russet potatoes thoroughly, then dry them with paper towels.

Pierce each potato several times with a fork.

Rub the potatoes with olive oil and sprinkle the skins with coarse salt.

Place directly on the oven rack or on a baking sheet.

Bake for approximately 50–65 minutes, or until the potatoes are tender when pierced with a fork.

Step 2: Season the Chicken

While the potatoes bake, season the chicken breasts with garlic powder, Italian seasoning, paprika, salt, and pepper.

Heat the olive oil and butter in a large skillet over medium heat.

Add the chicken breasts and cook for approximately 5–7 minutes per side, depending on thickness, until golden brown and cooked through to an internal temperature of 165°F.

Remove the chicken from the skillet and allow it to rest for 5 minutes.

Slice into tender pieces and set aside.

In the same skillet, melt the butter over medium-low heat.

I absolutely love this Marry Me Chicken Loaded Baked Potato! I wanted to take the delicious flavors of Marry Me Chicken and turn them into something a little different, and I thought a big, fluffy baked potato would be the perfect way to serve it.

I baked a large potato until it was tender, then sliced it open and fluffed the inside with butter, salt, and pepper.

Then I made my Marry Me Chicken, sliced the tender chicken breasts, and laid the pieces right over the top of the potato.

I spooned plenty of that wonderful creamy sauce over the chicken and potato and finished everything with Parmesan cheese.

It was absolutely delicious!
