Grinch Marshmallow Cheesecake Recipe

Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 2 tablespoons sugar

For the Cheesecake

  • 3 bricks (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • ¼ cup sour cream
  • 1 teaspoon marshmallow flavoring
  • Lime green food coloring
  • Red candy hearts (for topping)

For the Topping

  • Cool Whip or whipped cream
  • Lime green food coloring
  • Red candy hearts

Instructions

1. Make the Crust

  1. Preheat oven to 350°F.
  2. Mix graham crumbs, melted butter, and sugar.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake for 8 minutes, then set aside to cool.

2. Make the Cheesecake Batter

  1. Beat softened cream cheese and sugar until smooth and fluffy.
  2. Add eggs one at a time, mixing well after each.
  3. Add vanilla, sour cream, and marshmallow flavoring.
  4. Tint the batter a bright Grinch-green using lime green food coloring.
  5. Mix until smooth and the color is even.
