Gooey Butter Cake Cheesecake
Gooey Butter Cake Cheesecake
If gooey butter cake and cheesecake had a baby… this would be it. This Gooey Butter Cake Cheesecake starts with a rich graham cracker crust, a creamy cheesecake filling loaded with chunks of gooey butter cake, and is finished with a full circle of gooey butter cake baked right on top.

Add piped whipped cream and extra gooey butter cake pieces, and you have a show-stopping dessert that feels straight out of a bakery.
This is not an everyday dessert — this is a celebration dessert.

Jennie’s Thoughts
This gooey butter cake cheesecake is definitely one of those extra desserts — but sometimes that’s exactly what you want. I loved combining two classic favorites into one show-stopping dessert that feels bakery-worthy but still homemade.

Using gooey butter cake inside the cheesecake and on top gives it the perfect mix of creamy, rich, and gooey in every bite. It’s not a dessert you make every week — it’s the kind you bring out for holidays, birthdays, or when you really want to impress.

Ingredients
Gooey Butter Cake (9×13 pan)
Graham Cracker Crust
- 2 cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup granulated sugar
Cheesecake Filling
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 cup sour cream
- 1 teaspoon vanilla extract
Topping
- Prepared whipped cream (piped)
- Extra chunks of gooey butter cake

Instructions
1. Prepare the Gooey Butter Cake
Bake a 9×13 gooey butter cake according to your recipe or package directions. Allow it to cool completely.
Once cooled, place your springform pan upside down on top of the gooey butter cake and carefully cut a circle around it.
Set this circle aside — it will be used as the top layer later.
Cut the remaining gooey butter cake into bite-sized chunks and set aside.

2. Make the Graham Cracker Crust
Preheat oven to 350°F.
Mix graham cracker crumbs, melted butter, and sugar until combined.
Press firmly into the bottom of a greased springform pan.
Bake for 10 minutes, then remove and let cool slightly.

3. Make the Cheesecake Batter
In a large bowl, beat the cream cheese and sugar until smooth and creamy.
Add eggs one at a time, mixing just until combined.
Stir in sour cream and vanilla extract until smooth.

4. Add Gooey Butter Cake Chunks
Gently fold the gooey butter cake chunks into the cheesecake batter.
Pour the batter over the prepared crust, spreading evenly.

5. Bake
Bake uncovered at 350°F for 1 hour.
The center should still have a slight jiggle.
Turn the oven off, crack the door slightly, and allow the cheesecake to cool gradually for 30 minutes.
Remove and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

6. Assemble & Decorate
Once chilled, carefully place the reserved gooey butter cake circle on top of the cheesecake.
Pipe whipped cream dollops around the edges.
Finish by placing a chunk of gooey butter cake in the center of each whipped cream dollop.
Refrigerate until ready to serve.

Tips for Best Results
- Use room-temperature cream cheese for the smoothest filling
- Do not overmix the batter — this prevents cracks
- Let the cheesecake cool slowly to avoid sinking
- Chill overnight for clean slices

Storage
- Store covered in the refrigerator for up to 4 days
- This cheesecake is rich — small slices go a long way
- Not freezer-friendly due to the gooey butter cake topping
