Ingredients

For the Muffins:

  • 3 ripe bananas, mashed
  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour
  • ¼ cup milk (or buttermilk for a richer flavor)

For the Streusel Topping:

  • ¼ cup unsalted butter, melted
  • ½ cup brown sugar, packed
  • ½ teaspoon cinnamon
  • ⅔ cup all-purpose flour

Instructions

  1. Preheat oven to 375°F and line or grease a jumbo muffin pan (makes about 6 large muffins).
  2. In a large bowl, mash the bananas until smooth.
  3. Add melted butter, brown sugar, egg, and vanilla. Whisk until well combined.
  4. Stir in the baking soda, baking powder, and salt.
  5. Gently fold in the flour and milk until just combined — don’t overmix.
  6. Divide the batter evenly into the muffin cups, filling each about ¾ full.

Make the Streusel Topping:
7. In a small bowl, mix together the melted butter, brown sugar, cinnamon, and flour until crumbly.
8. Sprinkle a generous amount of streusel over each muffin.

Bake:
9. Bake for 23–26 minutes, or until the tops are golden and a toothpick comes out clean.
10. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
