Crock Pot Loaded Creamed Corn with Bacon

When the holidays roll around, or I’m planning a big family meal, I love side dishes that don’t require constant babysitting. That’s why this Crock Pot Loaded Creamed Corn with Bacon is one of my favorites.

It’s creamy, cheesy, smoky, and just about the easiest recipe you’ll ever make. Toss everything in the slow cooker, let it work its magic, and you’ve got a crowd-pleasing side dish that tastes like comfort in a bowl.

The beauty of this dish is that it frees up oven space (a lifesaver on Thanksgiving or Christmas), and you don’t have to stand at the stove. The slow cooker does all the work — blending the sweet corn with butter, cream, and two cheeses until it’s rich and silky. Ingredients

  • 4 cups corn (frozen or canned, drained)
  • 4 slices bacon, cooked and crumbled
  • 2 tbsp butter
  • ½ cup heavy cream
  • ½ tsp garlic salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded provolone cheese
  • 2 green onions, sliced (plus more for garnish)

Instructions

Step 1: Prep the crock pot
Spray the inside of your slow cooker with nonstick spray for easy cleanup.

Step 2: Add ingredients
Place the corn, butter, heavy cream, garlic salt, and pepper into the crock pot. Give everything a gentle stir.

Step 3: Slow cook
Cover and cook on low for 3–4 hours or on high for 1–2 hours, stirring once or twice.

Step 4: Stir in the cheese
About 30 minutes before serving, add the shredded cheddar and provolone. Stir until melted and creamy.

Step 5: Add the bacon
Right before serving, stir in most of the crumbled bacon and green onions, reserving a little to sprinkle on top.

Step 6: Serve hot
Scoop into a serving dish or serve straight from the crock pot to keep it warm for guests.
