Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large egg yolks
  • 1 1/2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup strawberry jam (or preserves)

Instructions

  1. Preheat oven: to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream the butter and sugar: In a large mixing bowl, beat the butter and sugar together until light and fluffy.
  3. Add eggs and vanilla: Mix in the egg yolks and vanilla extract until smooth.
  4. Add dry ingredients: Stir in the flour and salt until the dough comes together. If the dough feels too soft, chill for 20–30 minutes.
  5. Shape cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
  6. Make thumbprints: Use your thumb (or the back of a measuring spoon) to make an indentation in the center of each cookie.
  7. Fill with jam: Spoon about 1/2 teaspoon of strawberry jam into each indentation.
  8. Bake: 12–14 minutes, or until the edges are just starting to turn golden.
  9. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Tips for Perfect Thumbprint Cookies

  • Don’t overfill the centers — a small spoonful of jam is plenty.
