Ingredients:

For the cookies:

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon salt

For the filling:

  • 1 cup semi-sweet chocolate chips
  • ¼ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • ½ cup mini M&Ms (for topping)

Instructions:

  1. Preheat the oven:
    Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Make the cookie dough:
    In a large bowl, cream together the butter and sugar until fluffy. Add egg yolks and vanilla, mixing until smooth. Stir in the flour, cocoa powder, and salt until the dough forms.
  3. Shape the cookies:

    In a microwave-safe bowl, combine the chocolate chips and sweetened condensed milk. Heat in 20-second intervals, stirring until smooth and creamy. Stir in the vanilla.
  6. Fill and decorate:
    Once the cookies have cooled, spoon the fudge filling into the center of each cookie. Immediately top with mini M&Ms before the fudge sets. Allow the cookies to rest until the filling firms up slightly.
