Funfetti Mini Cheesecake: A Burst of Colorful Bliss

For the funfetti cake bottom layer:

  • 1 cup funfetti cake mix
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons water

For the no-bake cheesecake batter:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Gel food coloring (aqua)

For the topping:

  • Confetti sprinkles


  1. Preheat your oven to 350°F (175°C). Line the bottom of four 4-inch round springform pans with parchment paper and lightly grease the sides.

For the funfetti cake bottom layer:

  1. In a mixing bowl, combine the funfetti cake mix, egg, vegetable oil, and water. Mix until smooth and well combined.
  2. Divide the cake batter evenly among the prepared pans, spreading it out to form an even layer at the bottom of each pan.
  3. Bake the cake bottoms in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let them cool completely.

For the no-bake cheesecake batter:

  1. In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  2. In a separate mixing bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until well combined.
  4. Divide the cheesecake batter into two equal portions. Leave one portion plain and tint the other portion with aqua gel food coloring until the desired shade is achieved.

  1. Place the cake bottom on a plate and wrap the clear plastic cake collar around the cake, cut the collar until over laps a bit, and tape together.
  2. Pour the plain white no-bake cheesecake batter over the cooled funfetti cake bottom layer in each cake collar, spreading it out evenly.
  3. Place the cakes in the freezer to set up for about 30 minutes.
  4. Carefully pour the aqua-tinted no-bake cheesecake batter on top of the plain white layer, spreading it out to cover the surface.
  5. Sprinkle confetti sprinkles over the aqua cheesecake layer, pressing them down slightly.
  6. Place the pans back in the freezer to set up for at least 4 hours or overnight.
