Ingredients

Pancakes

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons sugar

  • 1 cup sourdough discard
  • 2 eggs
  • 1 cup milk

  • 2 teaspoons cinnamon
  • 2 tablespoons melted butter

Optional Glaze

  • 1 cup powdered sugar
  • 1–2 tablespoons milk
  • 1/2 teaspoon vanilla

Instructions

1. Make the Batter

In a large bowl, whisk together flour, sugar, salt, baking powder, and baking soda.

In another bowl, mix sourdough discard, eggs, milk, and vanilla.

Combine wet and dry ingredients until just mixed (don’t overmix).

2. Make the Cinnamon Swirl

In a small bowl, mix brown sugar, cinnamon, and melted butter until smooth.

Transfer to a small piping bag or zip-top bag and snip the corner.

3. Cook the Pancakes

Heat a skillet or griddle over medium heat and lightly grease.

Pour pancake batter onto the skillet.

Immediately pipe a swirl of cinnamon mixture onto the pancake.

Cook for 2–3 minutes, until bubbles form.

Flip and cook another 1–2 minutes until golden.

4. Add Glaze (Optional)

Whisk together powdered sugar, milk, and vanilla until smooth.

Drizzle over warm pancakes.
