Fluffy Blueberry Waffles

Ingredients for Blueberry Waffles

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ¾ cups milk
  • ½ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh or frozen blueberries (if frozen, do not thaw)

How to Make Blueberry Waffles

  1. Preheat your waffle iron. Lightly grease with non-stick spray or brush with melted butter.
  2. Mix the dry ingredients. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Mix the wet ingredients. In another bowl, beat together eggs, milk, melted butter, and vanilla.
  4. Combine. Pour the wet ingredients into the dry and stir gently until just combined. Be careful not to overmix.
  5. Fold in the blueberries. Gently stir them into the batter.
  6. Cook. Pour batter onto the preheated waffle iron and cook until golden brown and crisp.
  7. Serve warm. Top with butter, maple syrup, powdered sugar, or extra blueberries.

Tips for the Best Blueberry Waffles

  • Fresh vs frozen blueberries: Both work! If using frozen, don’t thaw them or the batter may turn purple.
