These adorable Mini Snowman Pancakes turn a simple stack of tiny pancakes into the cutest Christmas breakfast! Mini pancakes are layered with fluffy Cool Whip and decorated with mini chocolate chips and a little orange icing to create an easy snowman.

Easy Snowman Pancakes for Christmas

I love Christmas recipes that look special without requiring a ton of extra work, and these little snowman pancakes are exactly that.

Instead of making complicated pancake shapes, we’re using regular mini pancakes and stacking them with Cool Whip. The fluffy white filling peeking between the pancakes gives them a snowy look, while mini chocolate chips create the buttons and face.

Add a tiny orange icing nose, and you have the sweetest little pancake snowman!

Ingredients

  • Mini pancakes
  • Cool Whip, thawed
  • Mini chocolate chips
  • Orange decorating icing
  • Maple syrup, for serving

For Homemade Mini Pancakes

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 1/4 cups milk
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

Make the Mini Pancakes

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the egg, milk, melted butter, and vanilla.

Pour the wet ingredients into the dry ingredients and stir just until combined. Don’t overmix the batter.

Heat a nonstick skillet or griddle over medium-low heat and lightly grease with butter or cooking spray.

Spoon small circles of batter onto the skillet. Cook until bubbles begin to appear on top, then flip and cook the other side until lightly golden.

Remove the pancakes from the skillet and allow them to cool slightly before assembling the snowmen.

How to Make Mini Pancake Snowmen

Place one mini pancake on a plate as the base.

Add a spoonful or swirl of Cool Whip on top, then place another mini pancake over the Cool Whip.

Add mini chocolate chips to this pancake to make the snowman’s buttons.

Add another layer of Cool Whip followed by another mini pancake for the snowman’s head.

Use two mini chocolate chips for the eyes and several tiny chocolate chips to create a smiling mouth.

Finish the face with a small line or triangle of orange decorating icing for the snowman’s carrot nose.

Serve immediately with warm maple syrup for dipping or drizzling.

Tips for Making Pancake Snowmen

Let the pancakes cool for a few minutes before adding the Cool Whip. If they’re too hot, the Cool Whip can melt and the snowman layers may slide around.

Try to make the pancakes roughly the same size so they’re easy to stack. You can also make the pancake for the head slightly smaller if you want more of a traditional snowman shape.

For an extra festive breakfast, dust the plate lightly with powdered sugar to look like freshly fallen snow.

I think these Mini Snowman Pancakes are just the cutest little Christmas breakfast! I love that you don’t have to be able to make fancy pancake shapes to create them. You’re really just stacking mini pancakes with Cool Whip and adding a few simple decorations.

The little mini chocolate chip face and orange carrot nose are what really bring the snowman to life. And, of course, you have to serve them with maple syrup! I love putting syrup in a little bowl on the side so you can pull apart the mini pancakes and dunk them.

These would be so much fun for Christmas morning, a December snow day, or a holiday breakfast with the kids. They’re simple, sweet, and one of those little Christmas ideas that makes breakfast feel extra special.
