Ingredients You’ll Need:

  • Flour tortillas (cut into 3–4 inch rounds)
  • Melted butter
  • Lime green gel food coloring
  • Cinnamon sugar (mix 1/4 cup granulated sugar with 1 teaspoon cinnamon)
  • No-bake cheesecake filling (recipe below or use store-bought)
  • Red candy hearts (or red M&M’s, heart sprinkles, or jelly beans)

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping (like Cool Whip)
  • A few drops of lime green gel food coloring

Instructions:

  1. Make the Taco Shells:
    Use a round cookie cutter to cut small circles from your flour tortillas (about 3–4 inches across). Dip each circle in melted butter, then brush the tops with a bit of lime green gel food coloring. Sprinkle generously with cinnamon sugar.
  2. Shape and Bake:
    Drape the coated tortillas over the back of an inverted muffin tin to create taco shapes. Bake at 375°F for 8–10 minutes, or until crispy and golden. Let cool completely before filling.
  3. Prepare the Cheesecake Filling:
    In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until combined. Gently fold in the whipped topping and green food coloring until evenly colored and fluffy.
  4. Assemble the Tacos:
    Spoon or pipe the cheesecake filling into each cooled taco shell. Top with a single red candy heart in the center — just like the Grinch’s!
