Brown Butter Mini Banana Muffins

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 3 ripe bananas, mashed
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour
  • ¼ cup milk

Instructions

  1. Preheat oven to 350°F and lightly grease a mini muffin pan (makes about 36 mini muffins).
  2. In a small saucepan, melt the butter over medium heat. Continue to cook, swirling occasionally, until it turns golden brown and gives off a nutty aroma. Remove from heat and let cool slightly.
  3. In a large bowl, mash the bananas until smooth.
  4. Add the brown sugar, egg, vanilla, and cooled brown butter. Mix until well combined.
  5. Stir in the baking soda, baking powder, and salt.
  6. Add the flour and milk alternately, mixing gently until just combined. Don’t overmix — the batter should be soft and thick.
  7. Spoon the batter into the mini muffin cups, filling each about ¾ full.
  8. Bake for 11–13 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  9. Let cool for a few minutes before removing from the pan.

  • Brown your butter slowly and watch closely — once it starts to foam, it can go from perfect to burnt quickly.
