Ingredients:

  • 4 tbsp melted butter
  • 2 tbsp granulated sugar

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp instant espresso powder (or strong instant coffee)
  • 2 tbsp heavy cream

For the Topping (optional):

  • Whipped cream or Cool Whip
  • Dusting of cocoa powder or espresso powder
  • Chocolate curls or shavings

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 325°F (165°C). Line a 12-count muffin tin with paper liners.
  2. Make the Crust:
    In a bowl, combine crushed chocolate cookies, sugar, and melted butter. Stir until the mixture resembles wet sand. Divide evenly into liners (about 1 tablespoon each) and press firmly to form the crust.
  3. Make the Cheesecake Filling:
    In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract, espresso powder, and heavy cream until fully combined and silky smooth.
  4. Fill and Bake:
    Spoon the cheesecake batter evenly over the crusts, filling each liner about 3/4 full. Bake for 18–20 minutes, or until the centers are set but slightly jiggly.
  5. Cool and Chill:
    Allow cheesecakes to cool to room temperature, then refrigerate for at least 2 hours (or overnight) to set.
  6. Top and Serve:
    Before serving, top with whipped cream and a dusting of cocoa or espresso powder for a classic café look.
