Topped with a tangy citrus vinaigrette and optional garnishes like walnuts or feta, it’s a refreshing side dish that complements the richness of holiday favorites like turkey and mashed potatoes. Light, colorful, and full of fall flavor, this salad is a must-try addition to your Thanksgiving menu!
- 1 can of jellied cranberry sauce
- 1 can of whole berry cranberry sauce
- 1 6 ounce package of jello
- 1 can of mandarin oranges (in syrup)
- 1/2 cup of sugar – if needed – see instructions
- 1/2 teaspoon of Cinnamon
- 6 ounces of chopped pecans (optional)
In a large heavy saucepan, add 1 1/2 cups of water, and bring to a boil. Remove from heat, add the orange Jello, stirring until completely dissolved. Add both cans of cranberry sauce and stir well to blend. Add the Cinnamon and stir well.
If you found the mandarin oranges in heavy syrup, pour the oranges in a bowl, and cut the slices in thirds, and add to the cranberry mixture, including the syrup. Stir well to blend.
If you could only find the Oranges in juice, that’s okay, simply pour them into a bowl, including the juice, and add the 1/2 cup of sugar, and stir until the sugar dissolves. Cut the orange slices into thirds and add to the cranberry sauce, including the sweet juice, and stir well to blend.
Add the chopped pecans and stir. Cover with plastic wrap and place in the refrigerator overnight or up to 2 days before serving. Simply stir and place in a serving dish, and top with a Cinnamon stick. Serve and enjoy.
