HERE’S WHAT YOU NEED:
1 Package of Cream Cheese – 8 ounces
2 tubs of Philadelphia Garden Vegetable Dip
1 small Jalapeno – Chopped fine
2 cups of Colby Jack shredded Cheese
1/2 cup of Bacon – Crumbled
2 Tablespoons of Parsley – Finely Chopped
1 teaspoon of Garlic Powder
1 teaspoon of Garlic Salt
1 cup of Shredded Cheddar Cheese – to cover the outside of the Cheese ball
1 Sliced Jalapeno – for Garnish on top
HERE’S WHAT YOU DO:
In the mixing bowl of a stand Mixer, using the Paddle attachment, add the Cream Cheese, and mix until blended smooth. Add the tubs of Garden Vegetable dip, and blend. Add the Colby Jack Cheese, Crumbled Bacon, Parsley, Garlic Powder, and Garlic Salt, and mix just until blended. Place the Mixing bowl in the refrigerator.
Using plastic gloves, rinse the Jalapeno under cold water, and dry with a paper towel. Place the Jalapeno on a solid cutting Board, and keep a paper towel at the side. Gently cut the Jalapeno with a knife, from stem to end – lengthwise. Fold the Jalapeno back, or apart, and remove the seeds and any inner ribs, and place on the paper towel to discard. Soak up any Juice with the paper towel, and gently chop the Jalapeno into fine small pieces. Place the Pieces on a paper towel to soak up any liquid from the Jalapeno. MAKE SURE NOT TO TOUCH YOUR FACE OR EYES WHILE HANDLING THE JALAPENO! Place the chopped Jalapeno pieces in a small dish. Place the cutting board and knife in the sink, and wash immediately. Discard any paper towels that were used, and wipe any areas that came into contact with the Jalapeno. Remove the plastic gloves, and discard immediately.
Remove the Mixing bowl from the Refrigerator, and place back on the stand mixer, add the chopped Jalapeno to the cheese mixture, and mix until well blended. Place a large piece of Plastic Wrap in a bowl, and with a large spoon, spoon the Cheese ball mixture into the bowl. Wrap the Plastic Wrap around the Cheese ball, and form a ball, and place in the Refrigerator overnight.
Before serving, remove the bowl/Cheese ball from the Refrigerator, and place on a serving plate. Remove the Plastic Wrap, and cover the Cheese ball in the Shredded Cheddar Cheese, until it’s completely covered in the Shredded Cheese.
Using Plastic gloves, rinse the Jalapeno for Garnish, under cool water, and dry with a paper towel. Place the Jalapeno on a piece of Parchment paper, and gently slice off the stem, and slice the Jalapeno in small slices. Place the Slices on top of the Cheese ball for Garnish. Immediately discard the Parchment Paper, paper towel, and Plastic/disposable gloves.
Serve the Cheese ball with your favorite Crackers, Tortilla Chips, or Corn Chips. Enjoy!
