Ingredients

  • 6 cups chicken broth
  • 2 celery stalks, chopped
  • 1 small onion, chopped
  • 2 carrots, chopped
  • 1 cup pastina (or tiny pasta)
  • 1 tablespoon butter (optional, for richness)
  • Garlic salt, to taste
  • Garlic powder, to taste
  • Salt & pepper, to taste
  • Parmesan rind

Instructions

Step 1 — Simmer the Veggies

In a large pot, add the celery, onion, and carrots to the chicken broth.
Bring to a simmer and cook until the vegetables are completely soft.

Step 2 — Blend the Broth

Using a slotted spoon, remove the cooked vegetables and place them in a blender with a ladle of hot broth.
Blend until completely smooth.
Pour the blended vegetables back into the pot — this makes the broth thick, silky, and full of flavor.

Step 3 — Add the Pastina

Bring the broth back to a gentle boil.
Add the pastina and cook according to package instructions, usually 5–7 minutes, until tender.

Step 4 — Season the Soup

Add garlic salt, garlic powder, and regular salt to taste.
Stir in the butter and parm rind if you want an extra creamy, rich finish.

Step 5 — Serve Warm
