Hearty Taco Soup Recipe

This easy taco soup has become one of my go-to dinners when I want something hearty and satisfying without spending hours in the kitchen. It’s packed with ground beef, beans, corn, tomatoes, and all the flavors of your favorite taco night, but in a warm, comforting bowl.

I love how it simmers together and fills the kitchen with that delicious Tex-Mex aroma. Top it with shredded cheese, a dollop of sour cream, and crushed tortilla chips for the ultimate weeknight meal.

Ingredients

  • 1 lb ground round
  • 1 large onion, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 3 tablespoons brown sugar
  • 1 heaping tablespoon taco seasoning mix
  • 1/3 cup fresh Ortega taco sauce
  • 1 can Ranch beans, rinsed and drained
  • 1 can (15–16 oz) corn, drained
  • 1 can (14.5 oz) stewed tomatoes, undrained
  • 4–6 cups water (I used Dasani)
  • Garlic salt, seasoned salt, seasoned pepper, to taste

Instructions

  1. In a large pot or Dutch oven, cook the ground round until browned and no pink remains.
  2. Add the chopped onion and cook about 10 minutes until soft. Remove any excess fat.
  3. Sprinkle in garlic salt, seasoned salt, and seasoned pepper. Stir to combine.
  4. Add taco seasoning, cumin, taco sauce, and brown sugar. Stir well.
  5. Add Ranch beans, corn, stewed tomatoes, water, and minced garlic. Stir to blend.
  6. Bring the soup to a boil, then reduce heat to low and simmer for about an hour, adding more water as needed.
  7. Serve hot with tortilla chips, crackers, or cornbread.
