  • 1 tablespoon orange Jello powder

Instructions

Step 1: Prepare the Crust

  1. Crush the graham crackers into fine crumbs using a blender or food processor.
  2. In a mixing bowl, combine the graham cracker crumbs with sugar and melted butter. Stir until evenly coated.
  3. Line the bottom of a 7-inch springform pan with parchment paper. Press the crumb mixture evenly into the bottom of the pan to form a crust.
  4. Place the crust in the freezer to set while you prepare the filling.

Step 2: Whip the Cream

  1. In the bowl of a stand mixer, whip the heavy cream with 1 tablespoon of sugar on medium speed until soft peaks form.
  2. Increase the speed to high and continue whipping until stiff peaks form. Set the whipped cream aside in the refrigerator.

Step 3: Make the Cheesecake Base

  1. In the same mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy. Add the sugar and mix until fully combined, scraping down the sides as needed.

Step 4: Prepare the Jello Layers

  1. In three large ramekins or bowls, place 1 tablespoon each of lime, cherry, and orange Jello powder.
  2. Boil 1 cup of water, then divide the water equally among the three ramekins, stirring each one until the Jello dissolves. Let the mixtures cool to room temperature.
  3. Once cooled, stir one Jello flavor into each bowl of cheesecake filling, mixing until fully combined and vibrant in color. Add more powdered Jello if needed to achieve your desired hue.

Step 5: Assemble the Cheesecake

  1. Remove the crust from the freezer. Start with the lime layer: pour the lime cheesecake filling over the crust, spreading it evenly. Place the pan back in the freezer for 45 minutes or until the layer is firm.
  2. Once the lime layer is set, repeat with the cherry layer, spreading it evenly over the lime layer. Return to the freezer for another 45 minutes.
  3. Finally, add the orange layer on top and freeze the entire cheesecake for at least 4 hours, or overnight for best results.
