Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Pistachio Cheesecake Filling

  • 3 packages (8 ounces each) cream cheese, softened
  • 1 package (3.4 ounces) instant pistachio pudding mix, dry
  • 3/4 cup granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup heavy whipping cream

Optional Topping

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pistachios

How to Make Pistachio Cream Cheesecake

Step 1: Prepare the Graham Cracker Crust

Preheat your oven to 325°F.

Lightly grease a 9-inch springform pan and line the bottom with parchment paper.

In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.

Stir until the crumbs are evenly coated and resemble wet sand.

Press the mixture firmly into the bottom of the prepared springform pan, using the bottom of a measuring cup to create an even crust.

Bake for 10 minutes.

Remove from the oven and allow the crust to cool slightly while preparing the cheesecake filling.

Step 2: Beat the Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium-low speed until completely smooth and creamy.

Scrape down the sides of the bowl to make sure there are no lumps.

Add the granulated sugar and beat until well combined.

Step 3: Add the Pistachio Pudding

Add the dry instant pistachio pudding mix directly to the cream cheese mixture.

Mix on low speed until evenly incorporated.

The pudding mix will give the cheesecake its delicious pistachio flavor and beautiful pale green color.

There’s no need to prepare the pudding separately. Simply add the dry mix.

Step 4: Add the Remaining Ingredients

Add the sour cream, heavy whipping cream, and vanilla extract.

Mix on low speed until smooth.

Add the eggs one at a time, mixing gently after each addition just until incorporated.

Avoid overmixing once the eggs have been added, as too much air can cause the cheesecake to rise and crack during baking.

Step 5: Fill the Springform Pan

Pour the pistachio cheesecake filling over the prepared graham cracker crust.

Use a spatula to smooth the top.

Gently tap the pan on the counter a couple of times to release any large air bubbles.

Step 6: Bake the Cheesecake

Place the springform pan on a baking sheet and transfer it to the preheated oven.

For a creamier cheesecake and more even baking, place a separate oven-safe pan filled with hot water on the rack beneath the cheesecake.

Bake at 325°F for approximately 60–70 minutes, or until the outer edges are set and the center still has a slight jiggle.

The cheesecake should not look liquid in the center, but it should move slightly when the pan is gently shaken.

Step 7: Cool the Cheesecake

Turn off the oven and crack the oven door slightly.

Allow the cheesecake to rest inside for approximately 45 minutes.

Remove it from the oven and let it cool at room temperature for about 1 hour.

Transfer to the refrigerator and chill for at least 6 hours, preferably overnight.

The cheesecake will continue to firm up as it chills.

Step 8: Decorate and Serve

Once the cheesecake is completely chilled, carefully remove the sides of the springform pan.

For the optional whipped cream topping, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

Pipe decorative swirls of whipped cream around the outer edge of the cheesecake.

Sprinkle with chopped pistachios for a beautiful finishing touch.

Slice with a sharp knife, wiping the blade clean between cuts.

Serve chilled and enjoy!

Tips for Making the Perfect Pistachio Cheesecake

Use room-temperature cream cheese. Softened cream cheese blends smoothly and prevents lumps in the filling.

Use instant pudding mix. Be sure to use instant pistachio pudding rather than cook-and-serve pudding.

Don’t prepare the pudding first. Add the dry pudding mix directly to the cheesecake batter.

Mix the eggs gently. Overmixing can introduce too much air into the batter and cause cracking.

Don’t overbake. The center should still have a slight jiggle when the cheesecake is ready to come out of the oven.

Chill overnight. Refrigerating the cheesecake overnight gives it the best texture and makes slicing easier.

Decorate just before serving. Fresh whipped cream and chopped pistachios make a beautiful finishing touch.

How to Decorate Pistachio Cream Cheesecake

This cheesecake is beautiful on its own, but a few simple decorations can make it look extra special.

Whipped Cream Swirls

Pipe large swirls of homemade whipped cream around the edge of the cheesecake using a star piping tip.

Chopped Pistachios

Sprinkle finely chopped pistachios over the whipped cream or around the outside edge of the cheesecake.

White Chocolate Drizzle

Drizzle a little melted white chocolate over the top for an elegant finishing touch.

Pistachio Cream Topping

For an even richer pistachio dessert, warm a few tablespoons of sweetened pistachio cream spread until pourable, let it cool slightly, and drizzle it over the chilled cheesecake.

Fresh Raspberries

A few fresh raspberries add a beautiful pop of color against the pale green filling.

Can I Make Pistachio Cheesecake Ahead of Time?

Absolutely! In fact, I recommend making this cheesecake the day before you plan to serve it.

Cheesecake needs plenty of time to chill and set properly, and the texture becomes even better after several hours in the refrigerator.

You can prepare the cheesecake up to two days ahead and keep it covered in the refrigerator.

Add the whipped cream and pistachio decorations shortly before serving for the prettiest presentation.

How to Store Pistachio Cream Cheesecake

Store leftover cheesecake covered in the refrigerator for up to 4–5 days.

You can also freeze individual slices for up to 2 months.

To freeze, wrap each slice tightly in plastic wrap and place it in a freezer-safe container.

Thaw overnight in the refrigerator before serving.

For the best appearance, add fresh whipped cream after thawing rather than before freezing.

Frequently Asked Questions

Can I use pistachio pudding mix in cheesecake?

Yes! Instant pistachio pudding mix is a convenient way to add pistachio flavor and a pretty green color to homemade cheesecake. The dry mix blends directly into the cream cheese filling.

Do I need to add milk to the pudding mix?

No. For this recipe, add the dry instant pudding mix directly to the cheesecake batter. The sour cream and heavy cream provide additional moisture.

Why did my cheesecake crack?

Cheesecake can crack if it’s overmixed, overbaked, or cooled too quickly. Mixing gently and allowing the cheesecake to cool gradually can help prevent cracks.

Can I make this cheesecake without a water bath?

Yes! This recipe can be baked without placing the springform pan directly in water. A separate pan of hot water on the rack below can help keep the oven moist.

Can I add more pistachio flavor?

Yes. You can add a small amount of pistachio extract or swirl a little sweetened pistachio cream spread into the filling before baking. Start with a small amount so the flavor doesn’t become overpowering.
