Oreo Red Velvet Mini Cheesecakes

Ingredients:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • 1 tsp red food coloring (adjust for brightness)
  • 1 cup crushed Oreos
  • 12 whole Oreos (for crust)
  • Whipped cream or Cool Whip (for topping)
  • Extra Oreo crumbs (for garnish)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 325°F (165°C) and line a 12-count muffin tin with cupcake liners.
  2. Add the Oreo Crust:
    Place one whole Oreo cookie at the bottom of each liner. This becomes your perfectly simple crust!
  3. Make the Cheesecake Batter:
    In a mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add in the eggs one at a time, mixing after each addition. Stir in the vanilla extract, cocoa powder, and red food coloring until the batter is rich and vibrant.
  4. Add Oreo Crumbs:

  5. Fill and Bake:
    Pour the red velvet cheesecake batter over each Oreo crust, filling each liner about 3/4 full. Bake for 18–20 minutes, or until the centers are just set.

    Let the cheesecakes cool to room temperature, then refrigerate for at least 2 hours to set.
  7. Top and Serve:
