Lemon Ice Box Cake
This Lemon Ice Box Cake is absolutely delicious, and only takes a few minutes to put together. It’s a little crunchy, and a little gooey, a little silky and smooth, and wonderfully sweet and tangy, all at the same time!Â
It’s the perfect dessert for anytime or any occasion. You can make Lemon Ice box cake, ahead and leave it in the fridge until you’re ready to serve it, leaving you with more time for other tasks. Make sure you keep this one in your favorites!
Ingredients
FOR THE CRUST:
- 2 cups of graham cracker crumbs
- 1 stick of Butter, melted
- 2 Tablespoons of Sugar
FOR THE LAYERS:
- 1 box of Graham Crackers
- 2 packages of Lemon Instant Pudding mix – 3.4 ounces
- 4 cups of Milk
- 1 large tub of Cool Whip – 16 ounces
- 1 bottle of Goodman’s Lemon Flavoring
- 2 Tablespoon of Sugar
Directions:
In a microwave safe bowl, place the stick of Butter, and melt for about 15 seconds. Stir, and add Graham cracker crumbs, and Sugar. Stir well, coating the crumbs in the Butter. Press into an 8 X 11 dish.
Mix the 2 packages of Instant Pudding with the 4 cups of Milk, and stir to blend, using a Whisk, and whisk until completely blended smooth, thick and creamy. Spread half of the Pudding over the crust. Top the Pudding with Whole Graham Crackers, and break graham crackers as needed to fill in any gaps.
Mix half of the Tub of Cool Whip with the remaining Pudding until smooth and creamy, and spread evenly over the graham crackers. Place another layer of graham crackers on top of the Cool Whip Pudding mixture.
Add 1 Tablespoon of the Goodman’s Lemon Flavoring to the remaining Cool Whip, and the 2 Tablespoons of Sugar, and stir well to blend. Spread over the graham crackers, smoothing evenly on top.
Place the dish in the refrigerator for at least 8 hours, or overnight for best results.
When ready to serve, cut into 2 X 3-inch pieces, serve and enjoy!
NOTE: I sliced a lemon and added a slice to the top of each piece served; this is optional and may be served with or without lemon slices. ALSO: Goodman’s Lemon Flavoring is sold at Wal Mart and other select Grocery stores. You will find it on the baking isle, usually in a display rack. Goodman’s makes all flavors of Flavorings, extracts and syrups. I have found them to add a delicious flavor to whatever you’re making. The Lemon is really gooey and adds a wonderful flavor!
If you’re making this to take to a family gathering, or occasion, you can buy a foil pan with a lid to make this dessert, and that makes sure the dish is covered until time to serve. Keep refrigerated.
