It’s everything you love about hot cocoa, baked into a holiday cookie that’s just as fun to look at as it is to eat.

These cookies are pure showstoppers. The marshmallow topping puffs up slightly in the oven, giving each cookie that soft, pillowy look, and the drizzle of hot fudge makes them feel like something straight out of a bakery case.

I love adding these to my cookie trays alongside classics like Chocolate Crinkle Cookies and Chocolate Christmas Sprinkle Cookies. They always stand out because they’re so different—guests aren’t expecting hot cocoa in cookie form, and the surprise makes them even more delightful.

They’re also a fun treat to make with kids since they can help place the marshmallows, drizzle the fudge, and sprinkle the toppings.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup semi-sweet chocolate chips
  • 12 large marshmallows, halved
  • ½ cup hot fudge sauce (store-bought or homemade)
  • ½ cup mini marshmallow bits (or chopped mini marshmallows)

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in vanilla.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Slowly add the dry ingredients to the wet mixture until just combined.
  5. Fold in chocolate chips.
  6. Scoop dough into tablespoon-sized balls and place about 2 inches apart on prepared baking sheets.
  7. Bake for 8–9 minutes, then remove from the oven. Quickly press a marshmallow half into the center of each cookie.
  8. Return to the oven for 1–2 minutes, just until the marshmallows puff slightly.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Once cooled, drizzle warm hot fudge over each cookie and top with mini marshmallow bits.
