Instructions

  1. Cream Butter and Sugar:
    In a large mixing bowl, beat the softened butter and powdered sugar until light and creamy. Stir in the vanilla extract until well combined.
  2. Incorporate Dry Ingredients:
    Gradually add the flour and salt to the butter mixture, mixing until just combined. Fold in the finely chopped pecans to distribute them evenly throughout the dough.
  3. Chill the Dough:
    Cover the dough with plastic wrap and refrigerate for at least 30 minutes to firm it up.
  4. Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  5. Shape the Cookies:
    Scoop about 1 tablespoon of dough, roll it into a smooth ball, and place it on the prepared baking sheet. Repeat with the remaining dough, spacing the cookies about 1 inch apart.
  6. Bake:
    Bake the cookies for 12-14 minutes, or until the bottoms are just beginning to turn golden. The tops should remain pale.
  7. Cool and Roll:
    Allow the cookies to cool on the baking sheets for about 5 minutes, then carefully roll them in powdered sugar while still warm. Transfer to a wire rack to cool completely.
  8. Double Coating:
    Once the cookies have cooled, roll them in powdered sugar again for a perfect snowy finish.
