Grinch Linzer Cookies

Yield: 36

These festive treats not only capture the essence of the season but also add a playful twist to the classic Linzer cookie recipe.

Ingredients

  • 1 cup of Butter – softened
  • 1 cup of Sugar
  • 1 egg
  • 2 teaspoons of Vanilla
  • 2 1/2 cups of Flour
  • 1 teaspoon of Salt
  • Green food coloring
  • 1 cup Red raspberry jam
  • 18 Red candy hearts

Instructions

  1. In the mixing bowl of a Stand Mixer, add the Butter, Sugar, and Egg, and blend with the Whisk attachment until smooth, and creamy. 
  2. Add the Vanilla, and mix until blended.  In a separate bowl, add the Flour, and Salt, and mix well to blend.  Add the Flour mixture to the mixing bowl, and mix until blended, and smooth.
  3. Add green food coloring and mix until the all the cookie dough has turned green.
  4. Next, place the dough on a piece of parchment paper, sprinkle the dough with flour and roll out to 1/2" thickness.
  5. Then take a round cookie cutter and cut out cookies, cut out a small heart shape in the center of every other cookie.
  6. Remove the excess dough from around the edges and add cookies to cookie sheet using a spatula and bake at 350 degrees for 8-10 minutes. Remove from the oven to a wire rack, and cool completely.
  7. When cookies have cooled add raspberry jam to the cookie base that does not have the heart cut out of the center. Then, top the cookie with the heart cut out cookie and place a red candy heart in the center.
