Spiced Sugar Cookie Dough

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon molasses
  • 2½ cups flour
  • 1 teaspoon salt

Instructions

  1. Cream together butter and sugar until light and fluffy.
  2. Add the egg, vanilla, cinnamon, and molasses; mix until smooth.
  3. Add the flour and salt, mixing until a soft dough forms.
  4. Wrap the dough and chill for 30 minutes (helps the houses keep their shape).
  5. Roll out to ¼ inch thickness on a floured surface.

Royal Icing

  • 2 cups powdered sugar
  • 1–2 tablespoons milk or water
  • ½ teaspoon vanilla (optional)

Mix until thick and pipeable. Add more powdered sugar if too thin.

Cut & Bake the Mini Houses

  1. Use your mini gingerbread house cookie cutter set to cut out fronts, backs, sides, and roof pieces.
  2. Place the shapes on a parchment-lined baking sheet.
  3. Bake at 350°F for 8–10 minutes, or until edges are lightly golden.
  4. Let cool completely before assembling.

Assemble the Houses

  1. Pipe royal icing along the edges of each cookie piece.
  2. Attach the walls together and hold for a few seconds until they set.
  3. Add the roof pieces with more icing.
  4. Allow the houses to dry for about 15–20 minutes.

Decorate

  • Pipe dots, icicles, windows, and snowy edges with white icing.
  • Add snowflake sprinkles, tiny gingerbread man sprinkles, or any holiday decorations you like.
  • Optional: place a mini LED light inside each house to illuminate them.
