  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 sticks (3/4 cup) butter, softened
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 (3.4 ounce) box instant banana pudding mix (unprepared)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups white chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the all-purpose flour and baking soda. Set aside.
  3. In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then add the vanilla extract, mixing well after each addition.
  5. Gradually add the dry ingredients (flour and baking soda mixture) into the wet ingredients, mixing until just combined.
  6. Stir in the instant banana pudding mix until fully incorporated into the dough.
  7. Gently fold in the white chocolate chips until evenly distributed throughout the dough.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are set and lightly golden brown.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
