Ingredients:

  • 2 cups all-purpose flour
  • 1 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 2 teaspoon pure vanilla extract
  • 2 cups fresh blueberries
  • 1/2 cup Milk or Vanilla coffee mate coffee creamer

Instructions:

1. Preheat your oven to 350°F. Line a muffin tin with paper liners or grease it lightly to prevent sticking.

2. Add butter, sugar, and eggs and blend well.

3. next, add vanilla and blend well again.

4. Add flour, baking powder, salt, and mix with an electric mixer, alternating adding the milk, until a thick batter forms. 

5. Mash half of the blueberries and then pour into the batter and stir until combined.

6. Take the other half of the blueberries and add to the batter, carefully fold in the blueberries (lol). 

7. Line a 12 cup muffin pan with liners and fill each muffin cup with batter. Place in 350 degree oven and bake for about 30 minutes. remove from oven and let cool for 15 minutes and serve.
