This cowboy caviar recipe is from the 1940’s, and is a favorite appetizer and side dish at social events across the Southwest, and seems to show up in some version at most pot lucks, dinner’s or gatherings, everywhere. It’s usually an empty bowl by the end of the event, and it’s a great way to incorporate lot’s of fresh veggies and beans into your diet, this healthy cowboy caviar dressed up with a sweet zesty dressing and crunchy chips is full of so much flavor as well as vitamin c. This will surely go in your favorites for parties and family gatherings. It’s a great appetizer, or starter as well, be sure to serve this bean salad with organic corn chips.

Fresh ingredients you will need:

  • green bell pepper 
  • red pepper
  •  Black beans
  • Black-eyed peas
  • Pinto beans
  • Grape tomatoes 
  • Cilantro 
  • Frozen sweet corn
  • Garlic 
  • Limes
  • Lime zest
  • Red wine vinegar
  • Red onion 
  • Green onions
  • Olive Oil
  • Honey
  • Sugar
  • Coarse ground garlic salt
  • Seasoned pepper
  • Paprika
  • Cumin
  • garlic powder
  • Chili powder
  • Tortilla chips for dipping

HERE’S WHAT YOU DO:

In a large mixing bowl, mix chopped green pepper, chopped crunchy red bell peppers, black beans, black eyed peas, cherry tomatoes, cilantro, fresh corn, garlic, red onion, green onion, squeezed juice from the limes, and lime zest. Mix all ingredients until well blended. In a separate large bowl, mix olive oil, honey and sugar, garlic salt, seasoned pepper, paprika, cumin, and chili powder, until well blended. Pour dressing over vegetables and beans, and toss to coat, making sure all ingredients are well blended. Serve with Tortilla chips, and enjoy!

  • 15 oz black beans
  • 15 oz Black-eyed peas
