Ingredients
  

  • 1 Green bell pepper - chopped
  • 1 Red bell pepper - chopped
  • 15 oz black beans
  • 15 oz Black-eyed peas
  • 8 oz pinto beans
  • 1/2 cup Grape tomatoes
  • 1/4 cup cilantro
  • 1/2 cup sweet corn
  • 2 cloves Garlic
  • 1 tbsp lime zest
  • 1/4 cup red wine vinegar
  • 1/2 cup red onion
  • 3 green onions
  • 1/2 cup olive oil
  • 1/4 cup honey
  • 2 tbsp sugar
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 1/2 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder

Instructions
 

  • In a large mixing bowl, mix chopped green pepper, chopped crunchy red bell peppers, black beans, black eyed peas, cherry tomatoes, cilantro, fresh corn, garlic, red onion, green onion, squeezed juice from the limes, and lime zest.
  • Mix all ingredients until well blended. In a separate large bowl, mix olive oil, honey and sugar, garlic salt, seasoned pepper, paprika, cumin, and chili powder, until well blended.
  • Pour dressing over vegetables and beans, and toss to coat, making sure all ingredients are well blended. Serve with Tortilla chips, and enjoy!
