The sweet tartness of the cranberries complements the earthy taste of the cornmeal perfectly, while the orange zest adds a delightful citrus flavor. This easy-to-make dish is sure to become a favorite in your kitchen!
HERE’S WHAT YOU NEED:
- 3 Jiffy Cornbread Mixes
- 1/4 cup of Sugar
3 Eggs - 1/2 cup of Milk
- 1/2 cup of Orange Juice
- 1/2 cup of Canned Cranberries – Whole Berry Cranberries
- 1/4 stick of Butter
- 1 – 8 X 8-inch Foil Pan
HERE’S WHAT YOU DO:
In a large bowl, add the Jiffy Cornbread mixes, Sugar, Eggs, Milk, and Orange Juice, and stir well until completely mixed. Add the Cranberries and stir until mixed well. Place the Butter in the Foil Pan and place the pan in the Air Fryer at 350 degrees for about 3 minutes, or just until the Butter melts, and is bubbly – make sure you watch the Butter so it doesn’t burn; you may need a little more or a little less time depending on your Air Fryer.Â
When the Butter has melted, and is bubbly, or sizzling, carefully remove the pan from the Air Fryer, and place it on a solid surface, such as a stove top. Pour the Cornbread batter into the pan on to the melted Butter. Carefully place the pan back in the Air Fryer and bake the Cornbread for 15 to 20 minutes, or until it’s completely done, and a toothpick inserted in the center comes out clean. Serve warm with Butter. Enjoy!
Makes 6 – 8 servings
NOTE: Check the temperature on your Air Fryer after about baking the Cornbread for 5 minutes. If it looks like it’s getting too brown on top, turn the temperature down to 320, and cover loosely with Foil to stop the top from getting too brown. Different Air Fryers cook faster or slower, so just watch the Cornbread to make sure it comes out perfect.Â
