Cucumber Mint Jello Shots
Cucumber Mint Jello Shots
These Cucumber Mint Jello Shots are cool, refreshing, and a little unexpected. Made with cucumber vodka, lime gelatin, fresh cucumber, and mint, they have a crisp garden-fresh flavor that’s perfect for spring and summer parties.

They’re completely different from the super-sweet Jello shots you usually see.
The cucumber keeps them light and refreshing, fresh mint gives them a cool herbal finish, and lime adds just enough citrus to brighten everything up.
And that soft green color?
Absolutely gorgeous.
Cucumber Mint Jello Shots
Servings: 12–16 Jello shots
Prep Time: 15 minutes
Chill Time: 2–4 hours
Total Time: About 4 hours 15 minutes
Ingredients
- 1 box (3 ounces) lime gelatin
- 3/4 cup boiling water
- 1/2 cup cucumber vodka
- 1/2 cup cucumber water, strained
- 1/4 cup cold water
- 6–8 fresh mint leaves
- Fresh cucumber slices, optional, for garnish
- Fresh mint leaves, optional, for garnish

How to Make Cucumber Water
Peel approximately half of a medium cucumber.
Roughly chop the cucumber and place it in a blender with 1/2 cup cold water.
Blend until smooth.
Pour the mixture through a fine-mesh strainer.
Measure 1/2 cup cucumber water and set aside.
This gives the Jello shots real cucumber flavor without leaving pieces of cucumber suspended in the gelatin.
How to Make Cucumber Mint Jello Shots
Step 1: Prepare the Cups
Arrange 12–16 small Jello shot cups on a baking sheet or tray.
Step 2: Infuse the Mint
Place the fresh mint leaves in a heat-safe bowl.
Pour 3/4 cup boiling water over the mint.
Let the mint steep for approximately 5 minutes.
Remove the mint leaves.
You now have a lightly infused mint water that will give the shots a fresh mint flavor without pieces of herbs floating through the gelatin.
Step 3: Dissolve the Gelatin
Add the lime gelatin to the hot mint water.
Whisk for approximately 2 minutes, or until completely dissolved.
Step 4: Add the Cucumber
Stir in 1/2 cup strained cucumber water.
The fresh cucumber softens the sweetness of the gelatin and gives the shots their refreshing flavor.
Step 5: Add the Cucumber Vodka
Pour in 1/2 cup cucumber vodka and 1/4 cup cold water.
Stir until everything is completely combined.
Step 6: Fill the Cups
Carefully divide the mixture between the prepared Jello shot cups.
Fill each cup approximately 3/4 full.
Step 7: Chill
Transfer the tray to the refrigerator.
Chill for 2–4 hours, or until completely set.
Step 8: Garnish
Just before serving, add a very thin cucumber slice and a tiny fresh mint leaf to each shot if desired.
Keep refrigerated until serving.

What Do Cucumber Mint Jello Shots Taste Like?
These are cool, crisp, citrusy, and refreshing.
The lime gelatin gives you a sweet-tart citrus base, but cucumber keeps the flavor from becoming overly sweet.
Fresh mint adds a clean herbal finish.
Then cucumber vodka ties everything together without covering up those fresh flavors.
If you like cucumber cocktails, mojitos, or drinks with fresh herbs, you’ll probably love these.
Jennie’s Thoughts
I make so many bright, sweet, fruity Jello shots that I wanted this one to feel completely different.
Cucumber and mint immediately sounded refreshing to me.
I didn’t want to just use cucumber vodka and call it cucumber mint, though.
I wanted actual cucumber and mint in the recipe.
So I used fresh cucumber to make cucumber water and steeped fresh mint in the hot water before dissolving the gelatin.
It gives you those flavors without having little pieces of cucumber and mint floating around in the Jello.
And I love the color.
They’re green, but it’s a completely different feeling from a bright neon party shot.
Add a tiny cucumber slice and fresh mint leaf on top, and they look almost like miniature spa cocktails.
They’re fresh and pretty and just a little unexpected.
Why Use Lime Gelatin?
Lime works beautifully with both cucumber and mint.
It gives the shots enough sweetness to still feel like a Jello shot while adding citrus that complements the fresh ingredients.
The green color also works perfectly with the cucumber-mint theme.
Can I Use Unflavored Gelatin?
Yes.
If you want an even more sophisticated cucumber flavor, you can make these with unflavored gelatin instead of lime.
You’ll need to sweeten and flavor the liquid separately, but it gives you more control over the final flavor.
For an easy party recipe, though, lime gelatin keeps things simple and gives you a reliable set.

What Is Cucumber Vodka?
Cucumber vodka is vodka flavored with cucumber.
It has a lighter, fresher flavor than many fruit-flavored vodkas and works especially well with:
- Lime
- Lemon
- Mint
- Basil
- Watermelon
- Melon
It’s perfect for this recipe because it reinforces the fresh cucumber flavor.
Can I Use Regular Vodka?
Absolutely.
If you don’t have cucumber vodka, use regular vodka.
Because we’re using real cucumber water, you’ll still get cucumber flavor in the finished shots.
You could even let a few cucumber slices sit in the vodka for several hours before making the recipe to add more flavor.
Can I Make Them More Minty?
Yes, but mint can become overpowering quickly.
Start with 6–8 leaves.
If you want a stronger mint flavor, steep a few additional leaves in the hot water.
I wouldn’t finely chop a large amount of mint and add it directly to the gelatin because you want the shots to stay smooth and pretty.
Don’t Over-Steep the Mint
Mint doesn’t need to sit in hot water for very long.
Around five minutes is plenty.
Leaving the leaves in hot water for too long can introduce bitter or overly herbal flavors.
You want a fresh hint of mint—not something that tastes like mouthwash.
How to Garnish Cucumber Jello Shots
Cut cucumber into very thin slices.
For small Jello shot cups, you can cut each cucumber slice into halves or quarters.
Add a tiny mint leaf beside it.
Keep the garnish proportional to the shot.
You want it to look elegant rather than having a giant piece of cucumber taking over the cup.
Make Them Look Like Mini Spa Cocktails
These are naturally perfect for a spa-inspired presentation.
Serve them on a white tray with:
- Fresh cucumber slices
- Mint sprigs
- Lime wedges
- White flowers
- Clear glass accents
The pale green color looks especially beautiful against white.

Perfect for Summer Parties
Cucumber Mint Jello Shots are particularly good for warm-weather entertaining.
Serve them for:
- Garden parties
- Pool parties
- Bridal showers
- Girls’ nights
- Summer birthdays
- Backyard dinners
- Brunch parties
- Bachelorette parties
They’re a nice option when you want something lighter and fresher than the usual super-sweet party shot.
Cucumber Mint Mojito Jello Shots
You can easily turn this into a mojito-inspired variation.
Replace the cucumber vodka with white rum.
Keep the lime gelatin, cucumber water, and fresh mint.
Now you’ve got a refreshing cucumber-mint twist on a classic mojito.
Add Fresh Lime
For an even brighter citrus flavor, replace some of the cold water with freshly squeezed lime juice.
A tablespoon or two is plenty.
Fresh lime makes the cucumber and mint flavors pop without making the shots overwhelmingly sour.
How Many Jello Shots Does This Make?
This recipe makes approximately 12–16 small Jello shots, depending on the size of your cups.
For a large party, double the recipe.
Can I Make Cucumber Mint Jello Shots Ahead?
Yes.
Prepare the Jello shots 1–2 days ahead and keep them covered in the refrigerator.
I recommend waiting until shortly before serving to add the fresh cucumber and mint garnishes.
That keeps the cucumber crisp and the mint bright green.
How to Store Jello Shots
Cover the cups once the gelatin has completely set.
Keep refrigerated until serving.
For the freshest flavor, enjoy them within a few days.
Easy Refreshing Jello Shots
These Cucumber Mint Jello Shots are proof that Jello shots don’t always have to taste like candy.
Fresh cucumber gives them a cool, crisp flavor.
Mint makes them refreshing.
Lime adds a little citrus.
And cucumber vodka turns everything into an easy adults-only party shot.
They’re green, fresh, pretty, and completely different from the usual Jello shot.
If you’re looking for an easy summer Jello shot that’s a little more sophisticated, save this one.
