  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1–2 tablespoons oil, for frying

For the Spaghetti Sauce

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon sugar (optional, to balance acidity)
  • Salt & pepper, to taste

To Serve

  • 1 lb spaghetti
  • Freshly grated Parmesan cheese

Instructions

1. Make the Meatballs

  1. In a large bowl, combine ground beef, egg, crushed Ritz crackers, ketchup, brown sugar, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Mix just until combined—don’t overmix.
  3. Roll into meatballs, about 1 to 1½ inches in size.
  4. Heat oil in a large skillet over medium heat.
  5. Add the meatballs and cook until browned on all sides. Transfer to a plate (they will finish cooking in the sauce).

2. Make the Sauce

  1. In the same skillet, add olive oil, diced onion, and garlic. Sauté until soft and fragrant.
  2. Stir in crushed tomatoes, tomato sauce, Italian seasoning, sugar (if using), salt, and pepper.
  3. Bring to a simmer, then add the meatballs back into the sauce.
  4. Cover and simmer on low for 25–30 minutes, until the meatballs are fully cooked and tender.

3. Cook the Spaghetti

4. Serve
