Ingredients

  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar

  • 2 tsp vanilla extract
  • ¾ cup buttermilk (or milk with 1 tsp vinegar)

For the Lime-Green Glaze:

  • 1 cup powdered sugar
  • 2–3 tsp milk
  • 1/4 cup melted white chocolate
  • Lime green gel food coloring

For Decorating:

  • Mini marshmallow bits
  • Green or holiday-themed sprinkles
  • Red candy hearts

How to Make Mini Grinch Bundt Cakes

Step 1: Bake the mini bundt cakes

  1. Preheat the oven to 350°F. Grease your mini bundt cake pan with butter or non-stick spray and lightly dust with flour.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  4. Alternate adding dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.

  6. Bake 18–22 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan 10 minutes, then invert onto a wire rack to cool completely.

  1. Whisk together powdered sugar, milk, and green food coloring until smooth. Adjust the milk for desired consistency — thick enough to coat but still drizzle.

Step 3: Glaze and decorate

Drizzle the lime-green glaze over the cooled mini bundt cakes, letting it drip slightly down the sides.
