Ingredients You’ll Need

For the Dough:

  • 1 packet (2 ¼ tsp) active dry yeast
  • ½ cup warm water (110°F)
  • 1 tbsp granulated sugar (to activate the yeast)
  • ½ cup brewed coffee, cooled to lukewarm
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted and cooled
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 cups bread flour
  • 1 tsp salt

For the Filling:

  • ¾ cup brown sugar
  • 2 tbsp ground cinnamon
  • ⅓ cup unsalted butter, softened

For the Icing:

  • Pillsbury cream cheese frosting (or your favorite homemade version)

How to Make Coffee Cinnamon Rolls

1. Activate the Yeast

In a large mixing bowl (or the bowl of a stand mixer), combine the yeast, warm water, and 1 tablespoon of sugar. Stir gently and let it sit for 5–10 minutes until the mixture becomes foamy. This step ensures your rolls rise beautifully!

2. Build the Dough

Once your yeast is activated, add the brewed coffee, melted butter, eggs, remaining ¼ cup of sugar, and salt. Mix until well combined.

Slowly add the flour — beginning with 2 cups of all-purpose and 2 cups of bread flour — mixing until a soft dough forms. You can add a little more flour if needed depending on your kitchen’s humidity.

Knead the dough for 6–8 minutes, either by hand or with a dough hook, until it’s smooth and elastic. Place in a greased bowl, cover with a towel or plastic wrap, and let rise in a warm spot for about 1 to 1½ hours, or until doubled in size.

3. Roll & Fill

Once the dough has risen, punch it down and roll it out on a lightly floured surface into a 16×12-inch rectangle.

Spread the softened butter evenly over the surface. Then combine the brown sugar and cinnamon in a small bowl and sprinkle the mixture generously over the buttered dough.

Starting on the long side, roll the dough up tightly into a log. Slice into 12 even pieces using a sharp knife or dental floss.

Place the rolls into a greased 9×13-inch baking dish. Cover loosely and let rise for another 30–45 minutes, until they become puffy and soft.

4. Bake the Rolls

Preheat your oven to 350°F. Bake for 22–26 minutes, or until the tops are lightly golden and the centers are baked through.

5. Glaze & Serve

Let the rolls cool for just a few minutes, then drizzle generously with cream cheese frosting while still warm so it melts into every swirl.
